1. Vegetable Pulao


Ingredients:


Basmati rice – 1 cup


Mixed vegetables (carrot, peas, beans) – 1 cup


Onion – 1 (finely chopped)


Ginger-garlic paste – 1 tsp


Oil or ghee – 2 tbsp


Whole spices (bay leaf, cardamom, cloves) – 1 tsp


Salt to taste


Water – 2 cups


Method:


1. Heat oil in a pan and add whole spices.


2. Add onion and ginger-garlic paste and fry.


3. Add vegetables and cook for 2-3 minutes. 


4. Add rice and mix.


5. Add water and salt and cook on low flame till rice is cooked.

Ingredients:


Chicken – 500 grams


Onion – 2 (finely chopped)


Tomatoes – 2 (make puree)


Ginger-garlic paste – 1 tablespoon


Curd – 1/2 cup


Oil – 2 tablespoons


Turmeric, red chilli, coriander powder, garam masala – as per taste


Green coriander – for garnishing


Method:


1. Heat oil in a pan, fry onion till it turns golden.


2. Add ginger-garlic paste and fry till it becomes fragrant.


3. Add tomato puree and spices and cook.


4. Add chicken and cook for 15-20 minutes till chicken becomes soft.


 5. Add curd, mix and cook for another 5 minutes.


6. Garnish with coriander leaves and serve hot.

3. Paneer Masala


Ingredients:


Paneer – 250 gms (chopped)


Onion – 1 (finely chopped)


Tomatoes – 2 (puree)


Oil – 2 tbsp


Turmeric, coriander powder, red chilli, garam masala – as per taste


Coriander leaves – for garnishing


Method:


1. Heat oil, fry onion.


2. Add tomato puree and spices.


3. Add paneer and cook for 10 minutes.


4. Garnish with coriander leaves and serve.
